To lay in Stock Preserving House

There are two kinds in alcoholic drinks; the brewed drinks and the distilled drinks. As Wine does so, Japanese Sake also belongs to the group of brewed drinks. Generally, the group of brewed drinks is delicate and requires fine handling in comparing to the group of distilled drinks. The Japanese Sake is typically delicate as it cannot be stocked in higher temperature and must be shaded from sun shine. As so, if the Sake is stocked in preserving house with full and fine temperature control to mature, it concentrates the sake-taste from rice in itself, which is separate from the just-newly-brewed. Because of this, it is said that the storage manner is as much important as the material providing, in the Sake products.

Our stock preserving house was built in around 30 years ago by the founder of us. This house equips the refrigeration unit with fine control. While it required a big expenditure in the age, this house was very innovative in Sake brewing field as no one else thought the idea of stock maintenance in a refrigeration house. Even now, this innovative idea is much appreciated.

Almost of all Sake of us is maintained in this stock reserving house with careful and fine temperature control. All the time, our specialist of sake brewer folk watches the preserving stock to know the maturity in respective stock tank. Only the Sake with the full maturity is shipped to you.

The photo picture shows our stock preserving house, which is the re-building from one of traditional architectures since long time here.
