SAKE and MATERIALS

For you to know it, we brew the Sake from the following materials with the merits of location and climate suitable to it.

Water
From rice washing to blending, all the water used is from the well which supplies pure under-ground stream from Kishi-river taking its original source from Koya-San. This well supplies this special water from about 400 years ago, traditionally. This super-soft-water is very clear and much suitable to Sake.

Rice
All the kinds of rice are not necessarily good for Sake. Sake brewing requires typical kinds of rice, such as “Yamadanishiki”(山田錦), ”Gohyakumanngoku”(五百万石), and some. Our Sake is brewed mainly with these kinds of rice. Our spirit, “Sake from Earth,” makes us take partially the rice grown at our own rice field and the rice locally from Wakayama, as well.

Yeast
We use the original yeast from Sake union Japan, and also locally from Wakayama in these years.

Alcohol
This is provided by the special supplier who manufactures our brewing alcohol from cereals only. Preserving this alcohol with no biotechnical manipulation for about half a year, we make it be mature. After this half a year sleep, it comes into brewing process of our Sake.
